Police cars did indeed have only one key. Should you have the key copied, it can be a little tricky. You can use a Pentastar blank for the ignition and door; but for the trunk, the key would have to be cut down a bit in height.

My usual procedure is to break the lug nuts loose first, and then jack up the vehicle (unless you're down in a rut or don't have clearance to spin the lug wrench). The wheel is less likely to turn when it's loaded.

If the rear end really is that unstable, I would consider adding an anti-sway bar to the rear.
