The 273 would be a simple swap. You could swap the timing cover and pump from your 318, they are basically the same engine.

The engine in my AHB Diplomat is a 408 stroker from Muscle Motors and is a beast with 528 lb/ft of torque. But I will say the best all around 360 swap I ever did was the Mopar Performance 360/300hp magnum engine back in the day. It was only around $3100 intake to oil pan. Add a carb and a few other pieces and go. I think it had more than 300hp and 375lb/ft torque as rated. Smooth non-conspicuous idle but tire shredding torque. There were some quality control issues with some, from what I heard but man this was a deal, even back then.

I have a very nice 340 set of heads, a 340 intake, and a set of 340 rods, all very reasonably priced to throw on this 360 block.
Basically i have to clean the block, check the taper, and throw it back together with new bearings. I could just red neck it back together
