Personally I would take a sample to a fabric shop and see what they have that's similar. You can get a bigger selection by browsing a few places than what you would find online and the price should be better too. Check fabric stores and upholstery shops. Might not be the case in your area but it's worth a look.

I second SMS although I bought my vinyl landau roof from them.
The interior, I went down to local shopt and picked something that matched the material on the sun visors.
Here is what I learned though.
If you want to match what was there originally, you'll need extra fabric because the original headliner had a 'direction' to the weave for the pattern.
If you want something easier to match, look at what is in a suburban or truck currently. The fabric is not a 'direction' pattern in the weave. Makes it much easier to cut the pieces and not have one of them looking much darker or much more light than all the other pieces.
When I redo mine again, I'm going to do it with the non-directional fabric of something more contemporary.

I took my 83 Mirada to a local interior shop (they also rebuilt the drivers seat with new foam, etc). Damn close match far as I can tell, at least close enough for me. Buttttttttttttttt, beware the interior plastic trim shatters like glass. Very disappointing. The stuff around my left rear window fell into a dozen pieces and now it is taped together, looks bad. Chrysler made crappy plastic in those days (as noted by the rear fender crowns) and they have held up very badly. Problem is, try and find that trim today, on a Mirada! Made so few of these cars, and most were crushed in the 90s. Besides, any wreck left (would a similar year Cordoba work?) would prob also have brittle plastic that would crumble when disassembled for headline insertion. Despite all of that, it is nice to not have it hanging on my head anymore! Good luck!

Match the fabric and color of your sun visors. I’ve been slowly reupholstering my 5th ave with a PVC vinyl material that’s normally used for boats, find it at Joann fabric and craft store. It’s very UV, temperature and water resistant and durable, even matches my factory interior pretty well. Attached is a before and after of my pillars
Do you know what colors are available?
Looks much better (than before), and might even be easier to keep clean.

Thanks Bud, much appreciated. They have a plethora of colors available; and it’s very easy to clean and maintain in comparison to the factory fabric.

For what you're getting that's a very expensive price. I went to an upholstery supply shop and got super premium chair and sofa fabrics for those prices.
Idk, for being UV resistant, flame retardant, water resistant, having a freeze rating -10 degrees and even having anti mildew properties, was worth it to me. To each their own.

Went to Joann Fabric. 20.00. Worse part was insulation it glues to was not in the best shape. Then had to deal with the ttop part
I haven’t tackled my headliner yet but, I remove the old foam backing from the plastic moldings; made for a better finished product. Most of the foam backing had disintegrated over the last 30 years anyway. I still haven’t been able to find foambacked material that comes close to matching the interior on my Fifth Ave. I keep requesting sample swatches from companies online but, no luck yet.

Try StockInteriors. I bought my carpet from them, and they were great to deal with. They sent samples out twice to me, and also were extremely cooperative with a problem that I had. They list headliner material as well as headliner board.
